Ingredient:
Basmati rice- 3 cup
Baby corn – ½ cup
Cauliflower – ½ cup
French bean – ½ cup
Carrot – ½ cup
Green pea – 1/2 cup
Coriander leaf – ½
cup
Cashew nut – 10
pieces
Yogurt – 2 tsp
Tomato – 1 (make it
paste)
Coriander powder – ½
tsp
Cumin powder – ½ tsp
Garam masala powder
– around 1 tsp
Ginger garlic paste
– 1 tsp
Green chili – 5-6
Oil or ghee – ¾ cup
(ghee is preferable )
Turmeric powder – 1
tsp
Dried prune – 5-6
pieces
Salt – 1 and ½ tsp
Whole spice
(cardamom, cinnamon, cloves)- 4 pieces
Bay leaf – 2 pieces
Onion paste – 1 tsp
Onion – ½ cup
(finely chopped)
Saffron
color- a pinch
Procedure:
Wash all vegetables and cut in cubic size. Now mix ½ TSP
salt and turmeric. Fry it in little flame in ghee. Wash rice and keep it to
remove water. Boil 6 cup water in a big pot. When it will be boiled add rice.
Add ½ TSP salt and all spicy. Keep to be Baht.
Now take Baht in a net to excrete water. Heat oil in another pot and fry
onion. Half of the rice keep n a plate for arranges. Now add all spicy and cook
it. Then mix it with yogurt. Now mix cashew nut and fried vegetable with it.
Add a little water. Cook for 5-6 min until it become soft. Now add half of bay
leaf . Again cook it for 1 min. Keep aside half of the fried vegetables. At
first keep baht on half of vegetable. Green chilly, Dried
prune, bay leaves and fried onion spread on it. Again give vegetable then baht
on it. Mix Saffron color with 1 tsp water. Spread it on baht. Now cover it with
a lid so that vapor can not come out. When it will be cooked remove lid and mix
vegetables and baht. Then serve Vegetable Biryani with egg, kabab or any thing as your like.
