Akhni Pulao



Ingredients:

For polao:

Basmati 1 cup
Ghee/butter/oil 3 TSP
Chopped onion ½ cup
Chopped chilly 3 pieces
Salt as required
Sugar ½ TSP
Prunes - 3-4 pieces
Raisin 8-10 pieces

Akhanira water it:

Water 4 cup
Onion 3 piece 
Ginger 2 TSP
Cloves 4 pieces
Cardamom 4 pieces
Cinnamon 2 pieces
Casio leaves 2 pieces
Chili powder 6-7 pieces

Procedure:

Take 4 cup of water in a big pot. Add all ingredients which are taken for akhni water and boil it. When water will be boiled decreases the flame and continues the boiling. When water will be dried out remove water from it and separate the masala. Now wash the rice and keep it for excrete water. Heat oil/ Ghee in a pot. Fry half of the chopped onion and keep aside. Then fry it by giving remaining onion. Add rice, Prunes, and raisin and fry it for 4-5 minutes. When rice will be fried out add water which was removed from akhni, salt and sugar.
Cook it for 5-6 minutes in deep flame. Now decrease the flame. Again cook it for 20 min. Now serve the Akhni Pulao by giving pistachios on it.
